Carmel’s Cantinetta Luca Opens Artisanal Deli: Salumeria Luca

Featuring Cantinetta Luca Executive Chef/Partner Jason Balestrieri’s House-Made Menu Items and More

From the owners of The Mirabel Group (L’Auberge Carmel – Relais & Chateaux, Aubergine, Hotel Les Mars – Relais & Chateaux, Cantinetta Luca) comes the new Salumeria Luca, opening August 29 and located next door to Cantinetta Luca. With a passion for making his own or sourcing the best available artisanal products, Executive Chef and Partner Jason Balestrieri has created a wonderfully authentic Italian take-out deli and bakery in the heart of downtown Carmel. Salumeria Luca’s seasonal selections are sure to win the hearts of food-loving locals and visitors alike.

Salumeria Luca’s seasonally changing menu features Balestrieri’s signature house-made and imported salumi and prosciutto; breads baked fresh daily on premise including grissini, Genzano country bread, stirato, piadina, focaccia and rosemary filone for the made to order grilled panini sandwiches; imported Italian, local and house-made cheeses. In addition Salumeria Luca offers an ever-changing assortment of fresh house-made pastas include Tagliolini, Spaghetti, Pappardelle, Ravioli; pasta sauces include Bolognese, Pesto, Marinara, and Salsa Rustica; imported dry pastas, fresh pizza dough, Extra Virgin olive oils, barrel-aged Balsamic vinegars, sauces, marinades, an assortment of cured olives and condiments. Salumeria Luca sells a limited selection of hand-cut steaks including Cantinetta Luca’s 24oz. Bistecca Fiorentina.

Chef Jason Balestrieri says, “Salumeria Luca grew out of our customers continually asking to purchase the house-made items we serve in our restaurant next door. Since we are already making our salumi, breads, cheeses, pastas and sauces, it was logical to offer them for sale. Now locals and visitors can stop by and pick up a picnic to take to the beach, a bottle of wine, grab a scoop of gelato, or just the ingredients to make a simple, but delicious, dinner at home.”
Mirabel’s Wine Director Thomas Perez has chosen Salumeria Luca’s selection of premium Italian wines, offered at approachable prices. Along with a knowledgeable wine staff, Perez aims to introduce new and lesser-known varietals to customers. Many of the wines are also available at Cantinetta Luca.

Mirabel’s Executive Pastry Chef Ron Mendoza has created a selection of traditional Italian pastries and desserts, including house-made tiramisu, amaretti cookies, Gianduja chocolates, ricotta-lemon cake, banana cake, panettone, and cornmeal-rosemary biscotti. Seasonally-changing Italian gelato is made with fresh ingredients such as Watsonville strawberries, Gianduja, and Valrhona chocolate and in flavors including honey-ricotta, balsamic caramel, espresso, hazelnut, pistachio, toasted cinnamon, peach-verbena sorbetto and melon sorbetto.
