Aubergine, located in L’Auberge Carmel (Relais & Chateaux) hotel, and Cantinetta Luca restaurants are resuming their popular culinary series this month. The intimate and often sold-out classes are held monthly through December.
Aubergine Sweet & Savory Series: Limited to 10 people, these intriguing classes are held back to back on Wednesdays and Thursdays. Class participants will work in the Aubergine kitchen with Chef de Cuisine Justin Cogley and with Executive Pastry Chef Ron Mendoza. Each chef teaches a variety of essential techniques and offers professional knowledge to turn an ordinary dish into a real star. Classes are $100* per person and include recipes and instruction. In this hands-on class participants will learn how to make different types of fresh pasta, how to hand-roll and use a pasta machine, cutting and shaping pasta techniques, as well as recipes for perfect pasta sauces. Attendees will also enjoy their pasta creations in a family-style lunch.

Participants will learn tricks on how to create proper heat, how the perfect pizza dough makes all the difference, shaping the pizza, different styles to consider, delicious flavor combinations to top the perfect ‘pie’ and everything else one needs to know about the world’s favorite food.
